We produce the sausage according to an old Umbrian-Tuscan tradition, selecting carefully degreased meats that soften the texture and flavour.
Salt, a mix of spices including pepper and garlic are added to the finely minced meat. After a brief heat drying phase, the sausages are hung in a well-ventilated room to age.
With a characteristic, intense and fragrant taste, they look good, cut into thick slices and juxtaposed in the classic platters of mixed salami.
Each sausage has a weight that can vary.
