The result of the latest experiments, salami with saffron comes from the combination of pork and this spice which has now become traditional in the Umbrian territory. The particularity of this product is based precisely on the contrast, in the very consistency of the ingredients, which at the first taste brings out the taste of saffron well. The pistils of this flower, previously infused, are added to the finely minced lean pork meat; the salami, then dried, is aged for 30 days.
