Roveia is a legume similar to peas, ranging in color from dark green to brown or black with a flavor similar to that of broad beans. It is an ancient legume, which has almost completely disappeared from cultivation, but thanks to the wisdom of the elderly farmers who continue to sow it, it has been recovered and returned to our tables.
