The classic among the classics, salami prepared according to the old family recipe that has remained unchanged over the years.
After careful selection, the lean shoulder is ground very fine and mixed together with coarse grasselli, the mixing phase of this salami is very long and takes place in two stages, during which the lean and the grasselli must bind perfectly without form air bubbles.
After a short heat drying it is aged in well-ventilated rooms for a period of 40 days. We recommend it to be paired with our house wine, an IGT Umbria vinified with only Castiglione del Lago grapes, a perfect companion for hearty dinners with typical homemade flavours.
