The Lombetto is the product of the ancient tradition of the Umbrian butchery that comes from the processing of the noblest parts of the pig: the loins. The amount of fat is almost zero, the flavor particularly intense and pleasant. With a maturation of about two months it is appreciated as an appetizer accompanied with quality red wines.
