Superior category olive oil obtained directly from olives and solely by automatic procedures, as required by European legislation. In order to use this wording, in fact, the Extra Virgin Olive Oil must be obtained by extraction with only cold mechanical methods, i.e. at controlled temperatures. In addition, therefore, to the washing, decantation, centrifugation and filtration process, the olives do not undergo any other treatment since it is only in this way that all the properties that characterize, and make this type of oil so particular, remain.
