Also known as cured gota, it is prepared with one of the tastiest parts of the pig, the cheek-throat. It is processed and flavored following the same process used to make Pancetta; then aged for two months.
It can be enjoyed plain, thinly sliced, or warmed over slices of bland bread. Excellent in the kitchen to enrich first courses such as pasta alla amatriciana or carbonara.
