It is a cheese produced with only sheep's milk , coming from the pastures of the Val d'Orcia typical area renowned for the particularity of its natural and aromatic herbs such as thyme, savory, artemisia and other plants very common in the clays of VAL D'ORCIA from which, the production of cheese also benefits. The cheese is aged in special cells where it stays for over 7 months . During this maturation period, it is treated in crust with vegetable oil to preserve its flavor intact. After the maturation time of about 7/8 months, it can be marketed. The flavor is sweet and decisive . Fresh pecorino di Pienza is excellent for fresh appetizers and for filling sandwiches and toasts or sandwiches and cheeseburgers. It goes well with light and fresh white wines or charmat method sparkling wines, even rosés, they enhance its flavour.
