Lombetto is a product of the ancient tradition of Umbrian butchery, made using the noblest parts of the pig: the loin. There is almost no fat, and the taste is particularly intense and pleasant. It is matured for about two months, and is highly recommended as an appetizer accompanied with fine red wines.
