Pigs of about one year are selected for this Umbrian pork. After washing and boning, the pig is stuffed with seasoning: salt, pepper, garlic, natural flavours, liver and handfuls of rosemary. Once stuffed, the pig is tied tightly with string and placed in the oven.
The cooking process, kept under constant supervision to check the progressive browning, takes two to five hours, depending on the size of the animal. A firm favourite at festivals and village feasts, it is ideal as a filling for sandwiches, ideally accompanied with quality red wines.
