Also known as "seasoned pork cheek", guanciale is prepared using one of the tastiest parts of the pig, from the cheek and throat. It is processed and flavoured following the same procedure used to make pancetta, and then seasoned for two months.

It can be eaten cut into thin slices, or gently heated and served on sliced unsalted bread. Highly recommended for embellishing pasta dishes such as amatriciana or carbonara.
