We produce the sausage according to Umbrian-Tuscan tradition, selecting carefully degreased meats that soften consistency and flavour. Salt and a mix of spices including pepper and garlic are added to finely minced meat.
Following a brief warm-drying phase, the sausages are hung in a well-ventilated room to age, giving them their characteristic, intense and fragrant taste. Cut into thick slices they make a delightful addition to any classic cold cut selection.
