The Cojoni di Mulo is a typical sausage from Norcia, in Umbria. It is made from finely ground lean pork meat. Ageing takes place naturally, in a cool and humid environment, over a period of 40 days.
The taste calls to mind the most common flavours of our lands. Recommended in combination with a well-refined soft and full-bodied bottle-aged red wine, offering just the right acidity and flavour.
