Wild boar salami is the result of the influence of classic Tuscan pork home butchery on the long-established Umbrian tradition. Carefully selected defatted boar meat is mixed with pork in order to make the final product more tender.
Our experts finely grind the meat by adding spices to the mixture, including garlic, pepper and natural flavours. The salami is then dried and hung in well-ventilated rooms for 40 days.
Using well-established techniques we harmonize the typical gamey taste, making it more agreeable for every type of palate. We recommend it as an appetizer before a dinner based on game, accompanied with Tuscan red wines.
